The Sally's Paddock Redbank Winery was established by Neill and Sally Robb in the Pyrenees region of Central Victoria in 1973
Redbank is a distinctly Australian winemaking and culinarily focussed estate, named after the small town situated three kilometers to the north, two hours north-west of Melbourne at the heart of the Pyrenees rangea. Redbank Winery has established a reputation for producing wines of excellent quality, consistency and value. Neill and Sally originally planted the estate to Cabernet Sauvignon, Shiraz, Cabernet Franc, Merlot and Malbec, today there are forty five acres under vine, producing extremely high quality grapes. After more than thirty years in the wine business, Redbank Winery continues to be wholly owned and operated by Neill and Sally Robb.
The Sally's Paddock cuvee is the jewel in the Redbank crown. Named after winemaker Neill Robb's wife, Sally's Paddock is handcrafted from a single non-irrigated vineyard at Redbank Winery and is entirely estate grown and bottled. It is universally regarded as one of Australia's classic red wines. The unique combination of soil type, cool-mild climatic characteristics and un-irrigated traditional culture vineyards produce low yield grapes of high intensity, colour and flavour in the classic Pyrenees style. Sally's Paddock has been proudly listed as Distinguished, in the Langton's Classification of Australian Wine, since the catalogue's inception. Langton's Classification is now a cornerstone of the ultra-fine Australian wine market, based on the actual buying patterns of their clients, it transcends personal agendas, pompous glorifications and endless accolades.
Sally's Hill is another flagship wine made at Redbank, hand picked from the vineyards surrounding Hundred Tree Homestead on Sally's Hill including the famous Sally's Paddock vineyard. This exceptional varietal wine reflects the wonderful idiosyncratic characters and flavours of Redbank grapes, and the unique style of the Redbank Winery. Made in small batches, hand punched, wild yeast fermented and basket pressed, these wines truly express the potential of single varieties from un-irrigated vines, planted in 1973.
The exciting range of Hundred Tree Hill wines are also grown at vineyards around the Pyrenees, and crafted at the Redbank Winery. Handcrafted from estate grown, and other local small vineyards within the Pyrenees region, the exclusive Hundred Tree Hill range is currently only available via cellar door and through export sales.
In 1975, using local century-old hand made red bricks, Neill built a steep-gabled winery, known as Redbank Winery, and a colonial style home. This today provides a fabulous ambiance to taste the wines and also enjoy the delicious hand made dishes, at the Flying Pig Deli. The Flying Pig Deli is a result of the creative ideas of Neill and the fabulous culinary skills of Sally. It is a great eat-in spot much more than just a deli including delights such as Neill's smoked lamb, ploughman's platter, specialty cheese selections, fantastic espresso coffee and Sally's home made cakes prepared with care using quality ingredients. At Redbank Winery the cellar door is open every day, welcoming everyone to the heart of the Pyrenees.

"The vines are established on alluvial gravels over rich friable red clay soils at an altitude of 420 metres. The wines are on the elegant side, although they can show plenty of blackcurrant pastille and cedar wood aromas, palate richness, underlying oak and fine, grippy tannins. Sally's Paddock is a blend of Shiraz, Cabernet Sauvignon, Merlot and Cabernet Franc a palette of aromas and textures woven together without any variety dominating the wine. It is made with a laissez-faire approach and maturation takes place in a combination of new (60-70%) French and American oak puncheons" -Langtons.com.au
