Chardonnay by Fishers Circle of Western Australia. Fig and citrus flavours on a fresh, balanced palate with more tropical and stone fruit touches. Western Australia's Chardonnays are typically full-bodied and rich, fig and cashew flavoured, Medocy styled whites, thanks to the maritime winds and Euro-climate of the region. The separate parcels of generously flavoured, tightly structured Chardonnay were sorted and crushed back at the winery, fermentation was initiated with selected yeasts to enhance the natural characters of Western Australian fruit, after which the individual batches of wine were racked until taste trials and the final blending. The wine is refreshing, poised and graceful, a creamy well balanced mid palate, before a clean acid finish adding complexity and considerable length.
